Sleep is to make system to work in low power state. System will be in on state but the power to the hard disk and other components are off.
Hibernate will save all progress of your work currently performing in your system as copy to RAM memory and then in the hard disk. It will turns the computer completely off. When you turn on the computer next time it will access the copy and restore your last session. When you turns on your computer in hibernate it will load quickly because there is no need for start-up process.
